Debic: proud partner of the Coupe du Monde de la Pâtisserie

On 24 and 25 September 2021, the final of the prestigious Coupe du Monde de la Pâtisserie competition will be held in Lyon. The competition will take place during Sirha 2021: a renowned trade fair for the hospitality and pastry sectors. Debic has been a partner of this world-class competition for more than 20 years.

Sirha 2021, the home of the final round of the Coupe du Monde de la Pâtisserie and the Bocuse d’Or, will be a special edition for several reasons. COVID-19 and the constantly changing regulations by the various governments hampered some countries in their preparations. The competition had to be postponed as a result. The rules of the game have also been adapted to the changing world and lifestyles.

Because of the coronavirus, not every country had a chance to be selected for the regional editions of the Coupe de la Pâtisserie. For this reason, the organizing committee, chaired by Pierre Hermé, decided to go with the 2018 selection.

Participating countries

The Coupe du Monde de la Pâtisserie was founded in 1989 by Gabriel Paillasson (MOF Pastry and MOF Ice) in order to highlight the skill and disciplines of pastry chefs. He wanted to organise a competition for the very top of the profession worldwide. This year, the following 14 countries belong to the world class: Algeria, Brazil, Chile, China, Egypt, England, France, Italy, Japan, Morocco, Mexico, Russia, South Korea and Switzerland. They are the finalists of 2021. France, Japan and Italy are historically the top prizewinners and will compete fiercely against each other once again this year.

Theme for 2021

Every edition of the Coupe du Monde de la Pâtisserie has its own theme and own rules. This year, Patrick Roger, MOF chocolatier, artist and sculptor, chairs the jury. He will check each entry against the theme of ‘All art is an imitation of nature’. Candidates are challenged to stretch the boundaries without compromise and to enchant the jury. Limitations on the use of silicone, moulds and artificial colourings test participants’ mastery and inventiveness.

The 2021 edition of the Coupe du Monde de la Pâtisserie will be a trend-setter in this regard. It promises to be the start of a worldwide transformation in the pastry world, which will be further developed in the 2023 edition. Young talents demonstrate that innovation, challenge, technique and elegance can be combined perfectly well in the sweet world of gastronomy. The profession has changed substantially in recent years, and is marked by the impact of a greater female presence. Claire Damon, Sophie de Bernardi, Christelle Brua, Johanna Le Pape and Claire Heitzler are female jury members who will evaluate the teams in their own distinctive manner. Frédéric Cassel, president of the international organisation Relais & Dessert, will also be on the jury. On 25 September around 8:00 pm (French time), we will learn which country will be the successors to Malaysia. Debic will keep you informed via its channels.
