
ABOUT ADELINE
When you see her in the Netflix TV show Chef’s Table, you can’t help but be amazed at Adeline’s freestyle way of cooking. After a classic French culinary education and a two-year stint in Hong Kong, she now mixes those two cuisines in her three restaurants. Apart from the gastronomic restaurant yam’Tcha itself, she and her husband Chi Wah also run the Chi Wah tearoom, and the Lai’Tcha, which is a bistro with yam’Tcha cuisine. Adeline doesn’t believe in writing down recipes. ‘What I like doing in cooking is to design a dish out of enjoyment. I realize that you cook better when you give free rein to your instincts. It’s very spontaneous, very personal, actually.’
