Being the creative chef for Wittamer, that is over a hundred years old, comes with a lot of responsibility. On the one hand, it is your task to guide the house through new trends and techniques, while on the other hand,
you are the guardian of that rich heritage. So when a 90-year-old lady walks in, it is your job to bring her back to those golden memories of her youth, while at the same time responding to new trends, involving, for instance, less sweet and fat. According to Christophe, it is all about finding the right balance and developing discipline.
