200 g banana purée

150 g chocolate chip cookies

Garnish

2 bananas

10 chocolate chip cookies

10 chocolate decorations (Dobla)

Preparation

Banana parfait

Whip the parfait in a planetary mixer until light and airy.

Add the banana purée.

Chop the chocolate chip cookies into pieces and add them to the parfait.

Using a piping bag, pipe the parfait into the trays and freeze.

Finish with caramelised banana, chocolate decoration and a few chocolate chip cookies.
