Ingredients

For 10 servings

Grey cream

4 Conference pears

1 lime

3 g activated charcoal

1 l Debic Cream Plus Mascarpone

Garnish

50 g Oreo biscuits

30 blackberries

40 blackcurrants

Preparation

Grey cream

Pass the Conference pears and lime through the slow juicer.

Bring the juice to the boil and reduce by half

Dissolve the activated charcoal in it until the juice has a dark, black colour.

Store the juice in the refrigerator

Beat the Cream Plus Mascarpone until fluffy and mix in the black juice.

Store in a sealed container in the refrigerator.

Garnish

Finely grind the Oreo biscuits.

Assembly

Spoon a nice amount of grey cream into the plate.

Dress the berries around it and finish with the Oreo crumbs.
