Place the frying pan on the heat source and warm it up. Add the Debic R&F until it begins to smoke. Be careful not to let it burn.

Pat the meat dry and season to taste with pepper and salt.

Sear the meat on both sides to seal the juices. For an even heat transfer, move the meat as little as possible. Add garlic and thyme if desired. Baste regularly with the fat.
Tips
- When preparing large quantities, you can also place the meat in the oven to finish baking it after having seared it first.
