White chocolate parfait with cherry, orange and lime smoothie
400 ml Debic Parfait
100 ml Debic 35% with sugar
100 g White chocolate
500 ml Orange juice
1 x Tray of lime cress
Heat the whipping cream and dissolve the white chocolate in it. Leave to cool. Whip the parfait in a planet mixer until light and airy and add the white chocolate mixture. Transfer to a piping bag with a smooth nozzle and pipe into the glasses. Store in the freezer for 4 hours.
For the smoothie, blend all the ingredients together until smooth. Add some more orange juice if the smoothie is too thick.
Pour the smoothie à la minute on top of the parfait and garnish with an orange segment and lime cress.
