Ingredients

1000 ml Debic Crème Anglaise

1000 g dark chocolate

25 g pistachio nuts

50 g almond slivers

50 g sesame seeds

20 g icing sugar

Crème Anglaise 2L

Preparation

Group 1

Heat the Debic Crème Anglaise and add the dark chocolate.

Mix until smooth and pour into a tin which has been lined with cling film.

Leave to harden slowly in a cool place.

Cut into small cubes and then roll into balls.

Assembly

Roll the balls in the various garnishes: sesame seeds, finely chopped pistachios, icing sugar, almond shavings, etc.
