Ingredients

Group 1

1000 ml Debic Crème Anglaise

1000 g Dark chocolate

25 g Pistachio nuts

50 g Almond slivers

50 g Sesame seeds

20 g Icing sugar

  • Refined touch of caramel taste
  • Ideal fluidness and excellent coating ability
  • For warm and cold applications
  • Can be used in siphon for espumas

Preparation

Group 1

Heat the Debic Crème Anglaise Bourbon and add the dark chocolate.

Mix until smooth and pour into a tin which has been lined with cling film.

Leave to harden slowly in a cool place.

Cut into small cubes and then roll into balls.

Assembly

Roll the balls in the various garnishes: sesame seeds, finely chopped pistachios, icing sugar, almond shavings, etc.
