Almond joconde

200 g almond flour

200 g icing sugar

60 g flour

240 g whole egg

120 g egg white

30 g sugar

40 g Debic Brioche butter (melted)

Lemon curd

375 g lemon juice

375 g sugar

40 g egg yolk

150 g whole egg

250 g Debic Crème butter

10 g gelatin mass

Lemon mascarpone mousse

800 g Debic Cream Plus Mascarpone

125 g icing sugar

6 g lemon zest

75 g lemon juice

50 g gelatin mass

Lemon gel (sphere insert)

250 g lemon juice

125 g water

75 g sugar

8 g agar agar

Meringue shards

250 g egg white

500 g sugar

10 g cornstarch

Orange blossom mascarpone cream

500 g Debic Cream Plus Mascarpone

35 g sugar

5 g orange blossom water

Preparation

Almond joconde

Whisk almond flour, icing sugar, flour, and eggs until light and airy.

Separately, whip egg whites with sugar into soft peaks.

Fold into the batter, then add melted butter.

Spread onto a baking tray lined with parchment and bake at 220°C for 8-10 minutes

Let cool and cut out round disks (3 per cake).

Lemon curd

Heat lemon juice, sugar, yolks, and whole eggs to 82°C.

Add gelatin mass.

Blend with immersion blender and add butter around 40°C.

Pour into cylinder molds and freeze.

Lemon mascarpone mousse

Mix the Cream Plus Mascarpone with icing sugar, lemon zest, and dissolved gelatin mass in warm lemon juice.

Fold in the Cream Plus Mascarpone.

Lemon gel (sphere insert)

Bring all ingredients to a boil and cook for 30 seconds.

Pour into small spherical silicone molds.

Freeze.

Meringue shards

Whip egg whites to foam, gradually add sugar until stiff peaks.

Fold in cornstarch.

Spread thinly and bake for 1.5-2 hours at 90°C.

Cool and break into shards.

Orange blossom mascarpone cream

Whip all ingredients into a firm piping consistency.

Be careful not to overpower with floral flavor.
