A technique for an eye-catching presentation of starters and desserts
Equipment needed- Silicone molds
- Pastry bag
- Flane mixer
- Palette knife
- Spatula
Ingredients
Step-by-step
Beat the Tiramisù lightly in the planetary mixer and add the flavoring (fruit puree)
Transfer the parfait to a piping bag
Fill the silicone molds 1/3 with the parfait and work the edges well with a palette knife
Top up with the parfait and level the molds with a palette knife
Place the molds in the freezer until the mass is completely frozen
Remove the Tiramisù from the silicone molds
Tips
- This technique can also be used with liquid fillings. Then use a dosing funnel
- When using liquid fillings based on gelatin, first place the molds in the refrigerator so that the mass can gel, then freeze in order to be able to dissolve properly. Always let it thaw in the refrigerator to prevent condensation.
