How did you experience the past year?

The holiday season, with Christmas and New Year as its high points, are a challenging time for the bakery sector. A lovely period, in which professional skill reigns supreme and the artisan baker pulls out all the stops to fill his or her shop(s) with all sorts of classic December specialities through the various feast days. Probably the best time of the year! In France, the holiday creations by renowned pastry chefs are presented in magazines and weekend newspaper supplements as veritable works of art.

But this is far from self-evident. In this period, creativity and efficiency need to be combined in a perfect balance. Certainly this year, when many bakers are struggling with a shortage of staff, rising costs of ingredients and a sky-high energy bill. Lovely Christmas cakes with a unique look have to remain reasonable to produce. Festive pastries to serve with coffee or tea also have to be ready for the customer, despite fewer staff. And classics from the range must also be tempting for younger customers, and preferably be ‘Instagrammable’.
