Cannoli dough

Cannoli filling

500 ml Debic Parfait

50 ml Amarena syrup

2 g maldon salt flakes

Decoration

50 pieces Amarena cherries

30 g pistachio, grounded

Preparation

Parfait filling

Whip the Parfait in a planetary mixer until airy.

Add the Amarena syrup and the salt flakes.

Mix well and transfer to a piping bag. 

Assembly

Fill the cannoli with the parfait and place them in the refrigerator to set.

Finishing touch

Finish the cannoli with two pieces of Amarena cherries and grounded pistachio.
