Speculaas Basic Recipe

400 g butter

500 g brown sugar

200 g blond cassonade

1 egg

50 g water

1 kg flour

10 g baking powder

10 g speculaas spice mix*

Soften the butter.

Add the sugar and knead well.

Mix the egg into the mixture and continue to knead.

Now add the water and mix well.

Sift the flour with the baking powder and spices and knead until obtaining a crumbly dough.

Roll the dough into a ball and store, wrapped in plastic foil, in the fridge overnight at least.

Roll out the dough to 4 mm and cut out the desired biscuits.

Place them on a baking tray covered with baking paper.

Bake at 180°C for about 14 minutes, depending on the size of the biscuits.

Push the centre of the speculaas: if it springs back, the biscuit is well baked.

Leave the speculaas to cool on the baking tray.

Generally, speculaas spices consist of a mixture of one part pepper and ginger, two parts cloves and nutmeg and half a part cardamom.

More cinnamon makes Speculaas milder; nutmeg and pepper, on the other hand, provide a sharper flavour.

Aniseed, mace or coriander can also be added to create your own spice blend.
