A technique for making a creamy smooth vegetable creamEquipment needed
Put the cooked vegetables in the blender. In this example we use sous vide carrots.
Put the cooked vegetables and Debic Culinaire Original in the blender and add flavorings. Tip: Add the cream in two parts to keep it from getting too thin.
Use the blender to finely chop. Tip: Use the vegetables while they're still warm.
Pass the cream through a fine sieve.
Season further if necessary. In this technique we use mango kombucha.
Add salt and regenerate the cream in a pan
