270 g hazelnut paste

145 g praliné

300 g feuilletine

2 g fleur de sel

Chocolate crémeux

250 g egg yolk

220 g caster sugar

145 g T65 flour

40 g cocoa powder

74 g Debic Cake Butter

250 g egg white

65 g granulated sugar

Chocolate mousse

320 g semi-skimmed milk

60 g inverted sugar

220 g egg yolk

25 g hydrated gelatin

350 g dark chocolate 70%

Caramel for piping

103 g glucose syrup

145 g granulated sugar

300 g Debic Stand & Overrun

1.75 g pectin NH

40 g granulated sugar

1.75 g fleur de sel

2.3 g fine salt

Whipped caramel ganache

110 g granulated sugar

5 g vanilla paste

45 g glucose syrup

15 g sorbitol

75 g white chocolate 33%

55 g milk chocolate 40%

15 g hydrated gelatin

Whipped milk chocolate ganache

120 g Debic Stand & Overrun (1)

45 g glucose syrup

160 g milk chocolate 40%

320 g Debic Stand & Overrun (2)

Neutral spray glaze for entremets

100 g glucose syrup

200 g water

160 g sugar

4 g pectin NH

530 g neutral glaze

Preparation

Chocolate crisp

Melt the milk chocolate with the hazelnut paste and praliné.

Put the feuilletine and fleur de sel in the mixing bowl.

Mix everything well and weigh out 150 g into the mould.

Spread out, then freeze.

Chocolate sponge

Whip the egg yolk with the sugar using a mixer.

Sift the flour with the cocoa powder.

Melt the Cake Butter.

Whip the egg white to soft peaks at the same time.

Mix.

Pour into 150 g moulds (16 cm diameter).

Bake at 155°C for 10-12 minutes.

Chocolate mousse

Make a custard, with the milk, inverted sugar and egg yolk.

Pour it over the gelatin mixture and the dark chocolate.

Blend and cool to 40-45°C.

Fold into the whipped Stand & Overrun.

Caramel for piping

In a saucepan, make a caramel with the glucose syrup and sugar at 200°C (keep an eye on the colour).

Meanwhile, heat the Stand & Overrun and incorporate the sugar-pectin mixture.

Deglaze the caramel with the hot mixture and bring back to the boil.

Cool to 50°C before blending with the Cake Butter and salts.

Pour into a container and store in the refrigerator.

Bring to room temperature before use.

Whipped caramel ganache

In a saucepan, make a caramel by cooking the sugar to 200°C (the colour will vary depending on the quantity).

Meanwhile, heat the Stand & Overrun (1), vanilla paste, glucose syrup and sorbitol.

Deglaze the caramel with the hot mixture and melt any lumps.

Pour over the chocolate and the gelatin mass.

Blend, incorporating the cold Stand & Overrun (2).

Pour into a container and store in the refrigerator until the next day.

Whipped milk chocolate ganache

Heat the Stand & Overrun (1) with the glucose and pour over the milk chocolate.

Blend, incorporating the cold Stand & Overrun (2).

Store in the refrigerator and use the next day.

Neutral spray glaze for entremets

Heat the glucose and water to 40°C.

Incorporate the sugar-pectin mixture.

Bring to the boil and incorporate the neutral topping.

Blend and bring back to the boil.

Use at 90°C with the spray gun.

Assembly

Press the chocolate sponge onto the crisp.

Pipe the caramel onto the frozen sponge.

Pour mousse into a 16 cm round silicone mould.

Place the insert on top to seal, then smooth the surface and freeze.

Unmould, then spray the entremets.

Finishing touch

Decorate with the whipped ganaches and finish with chocolate decorations.
