Ingredients

For 10 tarts of Ø 8 cm

Shortcrust pastry

200 g Debic Cake Butter

4 g salt

170 g icing sugar

80 g hazelnut flour

100 g whole egg

345 g flour

100 g strong flour

Orange namelaka

8 g gelatin

40 g water

200 g milk

2 orange zests

2 vanilla beans

330 g white chocolate

400 g Debic Cream Cheese

white chablonage spray

Chocolate brittle

50 g white chocolate

200 g feuilletine

Orange reduction

500 g orange juice

150 g glucose

Custard

475 g milk

238 g Debic Stand & Overrun

2 orange zests

190 g egg yolk

24 g corn starch

24 g rice starch

154 g caster sugar

Finish

edible silver leaf

Preparation

Shortcrust pastry

Mix all the ingredients in a planetary mixer using the paddle attachment.

Make sure to use soft Cake Butter (18–20°C).

Leave to rest for at least 4 hours in the refrigerator.

Roll the pastry out to 3 mm and line the micro‑perforated moulds.

Bake at 155°C with the valve open.

Orange namelaka

Bloom the gelatin.

Bring the milk to the boil with the orange zests and vanilla beans.

Add the gelatin and pour it over the previously melted chocolate using an immersion blender.

Pour a little at a time to facilitate the emulsion.

Wait until the mixture reaches 35°C before adding the Cream Cheese.

Refine the texture with the mixer, avoiding air bubbles.

Remove from the moulds the next day if possible.

Coat with the white chablonage spray.

Chocolate brittle

Melt the white chocolate and mix it with the feuilletine.

Using a spoon, fill the base of the tartlets.

Orange reduction

Bring both ingredients to the boil.

Reduce by a third until a thick, slightly candied sauce is obtained.

Custard

Combine the milk, Stand & Overrun and orange zests, and bring to 60°C.

Separately, combine the egg yolks with the starches and sugar.

Add the Stand & Overrun and hot milk mixture.

Bring to a boil.

Store in the refrigerator with cling film touching the surface.

Assembly

Fill the base of the tartlets with the brittle.

Pour in the orange reduction.

Fill to the brim with the custard and level with a spatula.

Place the still‑frozen cream cheese namelaka on top.

Place in the refrigerator for a couple of hours before serving to allow the portions to reach the right serving temperature.

Finishing touch

Decorate with a silver leaf.
