Pandortorta with mascarpone and prosecco

Ingredients

For 4 cakes of Ø 18 cm

Pandoro infusion

200 g pandoro

200 g Debic Cream 35%

Pandoro ganache

227 g Debic Cream 35% (1)

35 g invert sugar

28 g glucose

250 g white chocolate 40%

400 g pandoro infusion

250 g Debic Cream 35% (2)

Prosecco gelatin

50 g water (1)

10 g gelatin

350 g reduced Valdobbiadene prosecco

175 g water (2)

50 g glucose

5 g agar

Pâte à bombe

235 g sugar

70 g water

105 g egg yolk

Mascarpone mousse

20 g gelatin

100 g water

400 g pâte à bombe

1 l Debic Cream Plus Mascarpone

Preparation

Pandoro infusion

Cut the pandoro into small pieces to facilitate the infusion.

Vacuum‑pack with Cream 35% and leave in the refrigerator overnight.

Pandoro ganache

Bring the Cream 35% (1) with the sugars to 60°C.

Pour it over the white chocolate.

Mix to refine the texture.

When the mixture reaches 35°C, add the infusion and Cream 35% (2).

Emulsify well and leave to rest.

Whip using a paddle attachment, taking great care because it whips very quickly.

Fill the insert moulds and freeze.

Prosecco gelatin

Bloom the gelatin.

Combine the remaining ingredients and bring to the boil.

Add the gelatin.

Pour into the insert moulds and freeze.

Pâte à bombe

Heat the sugar and water in a saucepan.

Cook to 121°C.

Slowly pour it over the egg yolks while mixing at low speed.

Increase the mixer speed slightly and continue whisking until light, fluffy and foamy.

Work the mixture until it returns to room temperature.

The pâte à bombe is ready to use.

Mascarpone mousse

Bloom the gelatin.

Whip the pâte à bombe.

Heat the gelatin and slowly add it to the pâte à bombe using a spatula.

Whip the Cream Plus Mascarpone separately.

Combine the two whipped mixtures.

Assembly

Assemble the cakes upside down by pouring the mascarpone mousse into the moulds.

Place the pandoro ganache in the centre.

Add the prosecco gelatin.

Pour in more mascarpone mousse to fill the remaining space in the moulds.

Complete with the pandoro discs, which will serve as the base.

Freeze.

Once ready, glaze with the white mirror glaze.

Finishing touch

Decorate with the white chocolate stars dusted with silver.
