Ingredients

For 14 servings

Marigny sponge cake

50 g T45 flour

50 g starch

50 g cocoa powder

250 g egg whites

20 g caster sugar

110 g Debic Cake Butter

240 g egg yolks

Whipped milk chocolate ganache with pecans

110 g Debic Stand & Overrun (1)

5 g glucose syrup

15 g inverted sugar

200 g milk chocolate

90 g pecan praline

40 g gelatin 220 bloom

450 g Debic Stand & Overrun (2)

Caramel for pouring

75 g glucose syrup

110 g caster sugar (1)

30 g caster sugar (2)

1 g pectin NH

225 g Debic Stand & Overrun

115 g Debic Cake Butter

2 g fleur de sel

Preparation

Marigny sponge cake

Sift the dry ingredients.

Whip the egg whites with the caster sugar.

Melt the Cake Butter at 40°C.

Gently fold the egg yolks into the egg whites.

Add the dry ingredients and the melted Cake Butter.

Spread onto a 60 x 40 cm Silpat baking mat.

Bake in a convection oven for 10 minutes at 175°C.

Whipped milk chocolate ganache with pecans

Heat the Stand & Overrun (1) with the glucose syrup and the inverted sugar.

Pour onto the chocolate and praline.

Add the hydrated gelatine and then the Stand & Overrun (2).

Mix.

Set aside to chill for 4 hours minimum.

Caramel for pouring

In a saucepan, make a caramel with the glucose syrup and caster sugar (1).

Mix the caster sugar (2) and pectin and then pour the mixture into the Stand & Overrun.

Mix and heat the cream to dissolve the caramel.

Bring to 108°C and add the Cake Butter and fleur de sel.

Mix and set aside at room temperature.

Assembly

Remove the sponge cake from the mould. Using a piping bag fitted with an 8 mm nozzle, pipe caramel lengthwise over the cake.

Pipe whipped milk chocolate ganache and repeat the operation.

Roll up the cake carefully and then tighten it.

Slightly freeze it to make slicing easier.

Decorate with a Saint Honoré nozzle and the whipped ganache.
