Ingredients

For 12 servings

Almond sponge cake

32 g Debic Cake Butter

80 g grounded almonds

45 g icing sugar

20 g T65 flour

10 g egg yolks

70 g egg whites

30 g caster sugar

Raspberry compote

5 g powdered gelatine

25 g water

200 g raspberry purée (1)

45 g caster sugar

15 g cornflour

70 g raspberry purée (2)

80 g whole raspberries, frozen

Lemon vanilla mousse

20 g whole milk

200 g Debic Stand & Overrun (1)

5 g vanilla paste

40 g caster sugar

2 g lemon zest

2 g lime zest

100 g egg yolks

32 g gelatine mass (220 Bloom)

100 g white chocolate

50 g lemon juice

50 g lime juice

300 g Debic Stand & Overrun (2)

Vanilla citrus crunch

95 g blanched almonds

11 g icing sugar

4 g sunflower oil

7 g Debic Cake Butter

2 g vanilla paste

2 g lime zest

60 g white chocolate

35 g feuilletine

1 g fleur de sel

Neutral glaze

100 g water

50 g glucose syrup

80 g caster sugar

2 g pectin NH

265 g neutral glaze

Preparation

Almond sponge cake

Soften the Cake Butter in a mixer with the paddle attachment.

Add the grounded almonds with the icing sugar and flour.

Add the egg yolks.

In a separate bowl, whip the egg whites with the sugar until firm peaks form.

Gently fold the whipped whites into the first mixture.

Spread onto a baking sheet.

Bake at 165°C for 15 minutes.

Raspberry compote

Bloom the gelatine powder with the water for 20 minutes.

Heat the raspberry purée (1) in a saucepan.

In a separate bowl, mix the sugar and cornflour with the raspberry purée (2).

Combine everything in the saucepan and bring to a boil.

Remove from heat, add the gelatine mass and stir until completely dissolved.

Pour into silicone moulds, add the frozen raspberries, then freeze.

Lemon vanilla mousse

Realize a custard cream with the milk, Stand & Overrun (1), vanilla paste, sugar, citrus zests and egg yolks.

Cook until thickened, then incorporate the gelatine mass before straining over the white chocolate.

Blend, then add the lemon and lime juices.

Cool to approximately 10°C before folding into softly whipped Stand & Overrun (2).

Vanilla citrus crunch

Toast the almonds until golden.

In a food processor, blend the almonds with the icing sugar and oil.

Add the Cake Butter and vanilla paste.

Finish with the lime zest, melted white chocolate, feuilletine and fleur de sel.

Blend again, then spread onto the cooled almond sponge.

Neutral glaze

Heat the water and glucose to 40°C.

Incorporate the sugar and pectin mixture.

Bring to a boil and add the neutral glaze.

Blend until smooth.

Use at 90°C with a spray gun.

Assembly

Unmould the raspberry inserts.

Cut the sponge using a 40 mm round cutter.

Pour the mousse into individual moulds.

Place the raspberry inserts on top.

Finally, cover with the crunchy sponge.

Smooth and freeze.

Demould and spray with the neutral glaze.

Finishing touch

Decorate with remaining compote and fresh raspberries.
