For 11 entremets of ⌀12cm

Friand cake

225 g almonds

225 g sugar

100 g icing sugar

275 g egg white

75 g flour

200 g beurre noisette

100 g lemon juice

2 lemons

150 g blueberries

Joconde

375 g almonds

375 g whole eggs

375 g icing sugar

400 g egg white

110 g sugar

105 g flour

75 g Debic Crème Butter

Quark mousse

15 g gelatine powder

75 g water (1)

180 g sugar

40 g water (2)

2 pods vanilla

80 g egg yolks

500 g quark cheese

680 g Debic Stand & Overrun

Namelaka

7 g gelatine powder

35 g water

200 g milk

10 g glucose

320 g ruby chocolate

400 g Debic Stand & Overrun

or Debic Prima Blanca

Raspberry-cherry compote

250 g raspberry purée

250 g cherry purée

20 g sugar

20 g pectin NH

1 lime zest and juice

400 g fresh raspberries

Glazing

56 g gelatine powder

280 g water (1)

345 g water (2)

630 g glucose syrup

630 g sugar

630 g white chocolate

300 g neutral glaze

red and blue colouring agent

300 g milk chocolate

100 g neutral glaze

Decoration

meringue sticks

1 fresh blueberry per piece

Preparation

Friand cake

Ground the almonds and mix with the sugar and icing sugar.

Add the egg white, followed by the flour, beurre noisette, and the juice and zest of the lemons.

Pipe into silicone moulds of Ø 12 cm.

Spread the blueberries over the cake and bake at 210°C for 15–17 minutes.

Joconde

Ground the almonds.

Whip the whole eggs with the icing sugar and almonds.

In a separate bowl, whip the egg white with the sugar and combine both mixtures.

Fold in the flour and finish with the melted Crème Butter.

Spread over 2 baking trays and bake at 210°C for 8 minutes.

Quark mousse

Bloom the gelatine powder with the water (1) for 20 minutes.

Cook the sugar and water (2) with the scraped seeds of the vanilla pods to 121°C and pour over the egg yolks while whisking continuously.

Add the bloomed gelatine.

Fold in the quark cheese and the semi-whipped Stand & Overrun.

Use immediately.

Namelaka

Bloom the gelatine powder with the water for 20 minutes.

Bring the milk with the glucose to a boil.

Pour over the ruby chocolate, add the bloomed gelatine and emulsify with a hand blender.

Combine with the liquid Stand & Overrun or Prima Blanca and mix briefly.

Store for a minimum of 12 hours at 4°C.

Whip the namelaka and pipe a ring onto a plastic sheet.

Flatten with a second sheet and freeze.

Raspberry-cherry compote

Heat the purées.

Dry mix the sugar and the pectin.

Incorporate the pectin at 50°C.

Add the lime juice and bring to a boil for 1 minute.

Set aside at -18°C, then store at +4°C.

Soften the mixture and add the fresh raspberries and lime zest.

Glazing

Bloom the gelatine powder with the water for 20 minutes.

Bring the water (2), glucose syrup and sugar to a boil and pour over the white chocolate.

Add the neutral glaze, bloomed gelatine and colouring agent.

Mix well using a hand blender.

Use at 35°C.

Assembly

Place the friand bases at the bottom of the rings.

Fill them two-thirds full with quark mousse.

Press the frozen joconde and compote insert into the mousse.

Top off with the remaining mousse.

Smooth the surface and store in the freezer.

Unmould the rings and glaze with the pink glaze.

Arrange the meringue sticks around the sides.

Finishing touch

Finish with a pre-frozen namelaka ring on top and a blueberry.
