Ingredients

For 40 servings

Poolish

20 g yeast

350 g water (20°C)

261 g W360 flour (1)

350 g W360 flour (2)

Pasta matta

425 g W320 flour

45 g Debic Cake Butter

50 g grape seed oil

210 g water

water-soluble red and green powdered colouring

Dough (mature poolish)

1350 g W320 flour

650 g milk (4°C)

220 g sugar

20 g yeast

12 g diastatic malt 12000 UP

195 g Debic Cake Butter

43 g salt

1000 g Debic Croissant Butter

White chocolate cream

1000 g milk

200 g egg yolks

35 g sugar

80 g cornflour

500 g white chocolate

50 g cocoa butter

Cookie dough

200 g Debic Cake Butter

140 g brown sugar

35 g sugar

3 g salt

250 g flour

50 g cocoa powder

3 g baking powder

50 g eggs

30 g egg yolks

250 g chocolate drops

Preparation

Poolish

Dissolve the yeast in the water and add the flour (1), mixing thoroughly.

Add the rest of the flour (2), which will be poured onto the poolish.

It will be ready when the top of the dough cracks, after about 35-40 minutes.

Pasta matta

Knead all the ingredients together, incorporating the red colouring into one portion and green colouring into another portion.

Roll out each coloured dough thinly and chill.

Dough (mature poolish)

Knead the flour, milk, sugar, yeast, malt and Cake Butter.

Add the salt to the dough when it has come together.

Form a ball and leave to rise for 30 minutes at room temperature.

Chill for 30 minutes in the freezer and leave the dough to rest for 10-12 hours at 0-2°C.

The next day, place the Croissant Butter sheet 3/4 of the way onto the dough and fold into three.

Rest for 30 minutes.

Fold into three again, inserting the red and green pasta matta into the fold.

Rest at 0-2°C for one hour.

Roll out the dough to a thickness of 1 cm, cut strips of laminated dough and place them on top of the dough.

Roll out a little and chill thoroughly.

White chocolate cream

Heat the milk in a saucepan.

In a separate bowl, whisk together the egg yolks, sugar and cornflour.

Pour the hot milk over this mixture, whisking continuously.

Return to the heat and bring to a boil, stirring constantly.

Remove from heat and add the white chocolate and cocoa butter.

Mix until smooth and chill thoroughly.

Cookie dough

Soften the Cake Butter together with the sugars and salt.

Gradually add the flour, cocoa powder and baking powder, alternating with the eggs and egg yolks.

Fold in the chocolate drops until evenly distributed.

Assembly

Roll out the laminated dough to 4 mm thickness and cut into 4 x 28 cm rectangles.

Pipe a line of white chocolate cream down the centre of each rectangle.

Shape the cookie dough into thin logs approximately 2 cm wide

Place one log on top of the white chocolate cream on each rectangle.

Fold each rectangle over the filling, pressing gently to seal.

Place seam-side down on lined baking sheets.

Leave to rise for 2.5-3 hours at 26°C with 75% humidity.

Bake at 175°C for 18 minutes.
