Cream cake with pear marmalade and caramel crémeux.


New Year's wish cream cake

Ingredients

For 8 servings

Sponge

150 g eggs

90 g sugar

90 g flour

20 g cornflour

20 g Debic Cake Butter, melted

Pear marmalade

150 g milk

100 g Debic Stand & Overrun

½ vanilla pod

50 g egg yolks

50 g sugar

20 g cornflour

20 g Debic Crème Butter

Caramel crémeux

100 g sugar

30 g water

250 g Debic Cream 35%

60 g egg yolks

3 g gelatine leaves

50 g Debic Cake Butter

Finish cream and decoration

1000 g Debic Stand & Overrun

80 g icing sugar

1 Happy New Year chocolate decoration

Preparation

Sponge

Whip eggs and sugar until light and airy and the mixture forms a ribbon when lifted.

Sift flour and cornflour together and gently fold into the mixture.

Mix a small part of the batter with the melted butter, then fold back in.

Pour into a greased Ø20 cm ring, bake for 25 minutes at 180 °C. 

Let cool and slice into three layers.

Pear marmalade

Mix pectin with part of the sugar.

Heat pear cubes and purée to 40 °C, add the sugar-pectin mixture and bring to a boil.

Add the remaining sugar and cook for 1 more minute. 

Add lemon juice, then cool until firm but spreadable.

Caramel crémeux

Heat sugar with water until it forms a dark caramel.

Deglaze carefully with warm cream and mix until smooth.

Whisk egg yolks and pour in the caramel cream, heat to 82 °C.

Add soaked gelatine and mix in the butter until smooth. 

Pour into a silicone Ø14 cm Happy New Year mould and freeze.

Assembly

Slice the sponge into three layers.

Spread a thin layer of pear marmalade followed by a layer of whipped cream.

Repeat with the second layer and place the third on top. 

Mask the cake completely with whipped cream and create a textured pattern using a palette knife. 

Finishing touch

Unmould the frozen caramel crémeux and spray it with white chocolate or cocoa butter. 

Place the Happy New Year decoration on top and finish with cream and decorations.
