Matcha white whocolate parfait

100 g white chocolate

1 l Debic Parfait

10 g matcha powder

30 g water

Decoration

40 g white chocolate shavings

2 g matcha powder

Preparation

Matcha white chocolate parfait

Melt the white chocolate with 100 ml Parfait at low heat to obtain a smooth mixture.

Sift the matcha powder into the cold water and whisk until fully dissolved.

Whip the Parfait with a planetary mixer until airy.

Fold the luke warm white chocolate mix into the parfait and add the matcha mixture until homogeneous, while keeping the texture light.

Assembly

Pipe the parfait into verrines and allow to set in the freezer.

Finishing touch

Sprinkle white chocolate shavings over the parfait.

Add a light dusting of matcha powder just before serving for a fresh green note and aromatic accent.
