Ingredients

For 10 servings

Baked potato

10 large baking potatoes (350-400 g each)

Filling

750 g mashed potato

150 g Debic Cream Plus Mascarpone

150 g Comté, grated

100 g butter

Cream Plus Mascarpone

300 ml Debic Cream Plus Mascarpone

2 g salt

20 g French mustard

Mustard caviar

100 g mustard seeds

250 ml water

250 ml vinegar

100 g sugar

6 cloves black garlic

0.4 g black food colouring

100 ml dashi

Finish

gold leaf

finely sliced chives

Maldon salt flakes

Preparation

Baked potato

Bake the potatoes in the oven at 190°C for approximately 75 minutes.

Cut them open and carefully scoop out the flesh.

Filling

Make a smooth, creamy purée with the butter, Cream Plus Mascarpone and grated Comté.

Season with salt.

Transfer to a piping bag fitted with a star nozzle and pipe the filling back into the potato skins.

Whip the Cream Plus Mascarpone in a stand mixer until light and airy.

Season with the French mustard and salt.

Mustard caviar

Rinse the mustard seeds thoroughly under cold running water.

Bring a pan of water to the boil and blanch the seeds for 2 minutes.

Drain and repeat twice more to reduce the bitterness.

Place the blanched seeds in a pan with the water, vinegar, sugar and dashi.

Blitz the black garlic with a small amount of the cooking liquid to form a smooth paste, then add to the pan along with the black food colouring.

Bring to the boil, then reduce the heat and simmer gently for 30–40 minutes until the seeds are fully cooked and have developed a caviar-like texture.

Check regularly and add a little water if needed.

Allow to cool in the cooking liquid so the flavours can fully infuse.

Store in a clean, sealed jar in the refrigerator.

Drain any excess liquid before serving.

Assembly

Gratinate the filled potatoes in the oven and arrange them on the plates.

Finishing touch

Finish with the mustard mascarpone cream, mustard caviar, gold leaf, finely sliced chives and Maldon salt flakes.
