Ingredients

For 10 servings

Pumpkin flan

500 g baked butternut squash

500 g whole eggs

60 g Parmigiano Reggiano

500 g Debic Cream Plus Mascarpone

Pumpkin crémeux

300 g baked butternut squash

200 g boiled potatoes

100 g Debic Culinaire Original

1 g curry

0.5 g xanthan gum

Sweet-and-sour butternut squash

300 g water

300 g white wine

150 g white wine vinegar

150 g sugar

5 bay leaves

5 g ginger powder

300 g butternut squash

Caciocavallo fondue

125 g smoked caciocavallo cheese

400 g Debic Culinaire Original

salt

Preparation

Pumpkin flan

Prepare the butternut squash and cut into large cubes.

Bake covered at 150°C for about 30 minutes.

Once cooled, take 500 g of pulp and blend until smooth.

Add the remaining ingredients, season with salt and pour into moulds.

Steam for 30 minutes.

Blast chill and remove from the moulds.

Serve hot.

Pumpkin crémeux

Blend the baked butternut squash with the potatoes until smooth.

Add Culinaire Original, curry and xanthan gum and emulsify.

Season with salt.

Transfer to a piping bag and store in the refrigerator until ready to use.

Sweet-and-sour butternut squash

Bring the water, wine, vinegar, sugar, bay leaves and ginger to the boil.

Leave to cool.

Cut the butternut squash into 2 mm-thick slices and cut out discs.

Place the discs in a vacuum bag, add the cold sweet-and-sour sauce and seal.

Cook at 95°C for 15 minutes.

Cool in ice water.

Caciocavallo fondue

Grate the cheese.

Bring the Culinaire Original to the boil.

Gradually add the cheese, stirring until completely melted.

Emulsify using a Thermomix to refine the texture.

Season with salt.

Use while hot.

Assembly

Place the flans on a baking tray lined with baking parchment.

Pipe the pumpkin crémeux into the centre of each one.

Decorate with the sweet-and-sour discs.

Heat in the oven at 150°C for 5 minutes.

Pour the fondue into the centre of the plate.

Top with the warm flans.

Finishing touch

Decorate with the edible flowers.
