Ingredients

For 4 servings

Bacon cream

200 g bacon

50 cl white wine

2 l Debic Stand & Overrun

Foie gras royale

500 g foie gras

6 whole eggs

3 egg yolks

salt, pepper

Lobster

4 lobsters (500-600 g each)

white wine

peppercorns

Lobster jus

olive oil

100 g semi-salted butter

1 fennel

1 head of garlic

5 shallots

4 tomatoes

50 g tomato paste

500 ml white wine

300 ml cognac

Fontainebleau cream

500 g Debic Stand & Overrun

500 g fromage blanc

10 g salt

Preparation

Bacon cream

Heat a rondeau pan, then add the bacon.

Deglaze with the white wine and add the Stand & Overrun.

Reduce by half and strain through a sieve.

Foie gras royale

Grill a lobe of foie gras, approximately 500-600 g.

Once cooked, devein and season.

Place the bacon cream in a saucepan with the foie gras and bring to the boil.

Transfer to a blender and add six whole eggs and three egg yolks.

Blend and season with salt and pepper.

Strain through a sieve and transfer to a baking tray.

The mixture should be approximately 2 cm thick.

Cover the tray and bake in a steam oven at 98°C for 15 minutes.

Lobster

Cook the lobsters in a chauffante with white wine and peppercorns.

Small claws 3 minutes.

Large claws 5 minutes.

Bodies 1 minute.

Reserve heads to make the juice.

Lobster jus

Chop the lobster heads into small pieces.

Drizzle olive oil into a hot casserole.

Brown the lobster heads, then add the butter and roast.

Add the finely chopped fennel, head of garlic, shallots and tomatoes.

Add the tomato paste.

Cook for 5-10 minutes, then deglaze with white wine and cognac.

Reduce and add enough water to cover the ingredients.

Simmer gently for 2½ hours.

Remove and strain the juice through a sieve.

Keep in a saucepan.

Fontainebleau cream

Whip the Stand & Overrun in a mixer.

Carefully fold in the fromage blanc.

Add the salt.

Assembly

Cut the foie gras royale into 10 x 4 cm rectangles, then reheat them
in the oven.

Reheat the lobster bodies along with the claws and knuckles in the lobster juice.

Place the foie gras royale rectangles in
the centre of the plate.

Place the lobster body on top, with the claws and knuckles to the side.

Finishing touch

Finish the lobster juice with a spoonful
of fontainebleau cream, then spoon 2 to 3 tablespoons around the
lobster.
