Ingredients

Raspberry yoghurt biscuit

500 g yoghurt

120 g sugar

40 g flour

60 g Debic Cream 35%

2 vanilla beans

1 lime, zest

20 g egg yolks

100 g egg whites

Pistachio crumble

145 g flour

110 g Debic Brioche Butter

120 g broyage 50% (almond-sugar mix)

120 g sugar

1 lemon, zest

pinch fleur de sel

500 g pistachios

200 g pistachio paste

200 g white chocolate

100 g cocoa butter

Raspberry and rose interior

1 kg raspberries

50 g rose water

6 g agar-agar

Raspberry mousse

60 g gelatine powder

180 g water

3400 g Debic Cream 35%

400 g icing sugar

250 g white chocolate

900 g yoghurt

1850 g raspberry purée

150 g Sakura (paste of cherry flower blossom)

Verbena sorbet

2500 g water

1000 g sugar

600 g glucose

50 g verbena

40 g ginger

4 lemongrass stalks

15 g kaffir lime leaves

1000 g lemon juice

2000 g raspberries

6 g sorbet stabilizer

10 gelatine sheets

500 g Greek yoghurt

Davidson plum sablé

250 g softened butter

125 g sugar

7.5 g salt

500 g flour

6 g Davidson plum powder

2 eggs

Raspberry and red fruit juice

2.5 kg frozen raspberries

350 g sugar

Sakura vinegar

40 g kaffir lime leaves

1 l oil

Preparation

Raspberry yoghurt biscuit

Mix the yoghurt, sugar, flour, Cream, vanilla and lime zest.

Add the egg yolks and combine.

Whip the egg whites to stiff peaks and gently fold in.

Bake for 15 minutes at 180°C.

Pistachio crumble

Roughly crush the pistachios.

Bake the crumble base, consisting of the flour, Brioche Butter, broyage, sugar, lemon zest, fleur de sel and pistachios, at 120°C for 1 hour 30 minutes.

After baking, add the pistachio paste, white chocolate and cocoa butter.

Mix well and spread between two plastic sheets.

Cut out circles of 6 cm.

Raspberry and rose interior

Purée the raspberries and mix with the rose water.

Add the agar-agar and pour into moulds to set.

Raspberry mousse

Soak the gelatine powder in the water.

Warm the Cream with the icing sugar to 60°C.

Add the white chocolate and mix until smooth.

Add the yoghurt, raspberry purée and sakura.

Blend well.

Finally, add the soaked gelatine and mix again.

Fill moulds and push in the previously frozen raspberry and rose interior.

Set in the freezer.

Verbena sorbet

Boil the water, sugar and glucose.

Infuse the verbena, ginger, lemongrass and kaffir lime leaves.

Strain the infusion.

Add the lemon juice and raspberries.

Add the stabilizer and soaked gelatine.

Mix in the Greek yoghurt at the end.

Churn.

Davidson plum sablé

Prepare as a classic sablé dough.

Bake at 170°C for 5 to 7 minutes.

Raspberry and red fruit juice

Infuse the raspberries, sugar and Sakura vinegar with the kaffir lime leaves in a sous-vide bath (Röner) for 1 hour.

Strain through a fine cloth.

Add the oil at the end and mix gently.

Assembly

Place a disc of biscuit (6 cm diameter) on a plate followed by the crumble.

Gently place the mousse and sorbet.

Arrange fresh raspberries around the mousse.

Finishing touch

Finish with the sablé and the fruit juice.
