Ingredients

For 10 servings

Cannellone d'aria

200 g pasteurised egg yolks

500 g Pietro Massi Fettuccine all'uovo No. 7 (or high-quality fresh egg fettuccine)

200 g Debic Traditional Butter, browned to beurre noisette

White truffle ice cream

442 g milk

331 g Debic Stand & Overrun

2.6 g salt

115 g sugar

10 g inverted sugar

7 egg yolks

3.6 g agar-agar

7 g lecithin

29 g dextrose

57 g white truffle

Preparation

Cannellone d'aria

Place the pasteurised egg yolks in a vacuum bag and seal.

Blast chill to -40°C.

Leave in the freezer for at least one night.

Cook the fettuccine in salted water for 2 minutes and 40 seconds.

Lay 9 strands side by side on a counter.

Spread a generous layer of the previously thawed yolks and form cannelloni.

Each strand of fettuccine should produce 2 cannelloni.

White truffle ice cream

Combine the milk and the Stand & Overrun with the salt, sugar, inverted sugar and egg yolks.

Bring the mixture to 40°C.

Add the powders (agar-agar, lecithin, dextrose) and the white truffle.

Continue heating the mixture until it reaches 80°C.

Pour the mixture into the Pacojet container and freeze using a blast chiller.

Once the mixture is solid, pacotise.

Assembly

In a frying pan, coat the bottom of the cannelloni with beurre noisette.

Just before serving, coat the whole cannellone with beurre noisette.

Using two warm spoons, shape the ice cream into quenelles.

Serve immediately in chilled cups.
