Ingredients

For 10 servings

Tortillita

40 g puffed spelt

40 g maize flour

40 g rice flour

40 g potato starch

20 g baking soda

4 g xanthan gum

180 ml water

400 ml vodka

salt

Carabinero prawns

10 Carabinero prawns 30/40

10 ml olive oil

1 lemon

Carabinero prawn espuma

500 g Carabinero prawn heads and shells

20 g tomato paste

500 ml Amontillado sherry

100 g onion

50 g garlic

100 g carrot

100 g celery

100 g Debic Traditional Butter

2 l fish fumet

500 ml Debic Culinaire Original

5 g salt

Plankton crème

250 ml fish fumet

100 g codium seaweed

1 g plankton

2 g salt

Aioli

500 ml Debic Culinaire Original

50 g aioli

1 g xanthan gum

1 lemon

5 g salt

Preparation

Tortillita

Blend all the dry ingredients into a fine powder and mix with the water and vodka.

Reserve for 30 minutes in the refrigerator.

Heat oil in a pot until 190°C.

Put a cake ring of 12 cm diameter in the oil.

Disperse 50 grams of batter in the hot oil until fully cooked.

Take the ring out of the oil and scoop out the fritter.

Season with salt and reserve in a dry place.

Carabinero prawns

Clean and reserve in the refrigerator for later use.

Carabinero prawn espuma

Heat the Carabinero heads and shells in oil.

Add the tomato paste and deglaze with the sherry.

Clean the vegetables and cut into fine brunoise.

Sweat the vegetables into the butter.

Add the vegetables and the fish fumet to the carabinero‑sherry mixture.

Cook for 30 to 40 minutes.

Pass through a fine sieve and reduce by half.

Add the Culinaire Original and reduce by half again.

Season to taste.

Cool down and reserve in a cream canister charged with 1 CO₂ cartridge before service.

Reserve in the refrigerator.

Plankton crème

Bring the fish fumet to the boil and add the seaweed.

Blend into a fine purée.

Strain through a fine mesh sieve.

Add the plankton and mix well.

Cool on ice water immediately and reserve in the fridge.

Aioli

Mix the Culinaire Original, aioli, xanthan gum and zest and juice of 1 lemon in a blender.

Pass through a fine mesh sieve.

Season with salt.

Reserve in the refrigerator.

Assembly

Marinate the prawns in olive oil and zest of the lemon.

With a blowtorch, cook the shrimp and slice into 5 pieces per prawn.

Arrange the plankton crème, aioli and shrimp onto the crispy tortillita.

Finishing touch

Arrange some espuma in a deep plate.

Arrange the tortillita on top and serve.
