Ingredients

For 10 servings

PX reduction

500 ml Pedro Ximenes

3 sprigs thyme

Tiramisu

1 l Debic Tiramisù

100 g egg yolks, pasteurized

500 ml PX reduction

Mandarin jellies

400 g mandarin juice, Boiron

4 g agar-agar

Almond ice cream

75 g flaked almonds

70 g Debic Cream 35%

120 g sugar

300 g milk

100 g egg yolks

4 g salt

Garnish

50 mini amaretti biscuits

2 shots espresso

0.5 dl amaretto

30 g crispy pearls, Mona Lisa

3 mandarins, segmented

3 g cocoa powder

Preparation

PX reduction

Reduce the Pedro Ximenes with the thyme sprigs to a syrup consistency.

Tiramisu

Mix the Tiramisù with the egg yolks and vacuum seal.

Cook for 1 hour at 75°C in a bain-marie or combi steamer.

Pass the mixture through a fine sieve.

Combine with the PX reduction in a 1‑litre siphon.

Charge with two gas cartridges.

Cool and reheat for use, or keep warm in a bain-marie at 75°C.

Mandarin jellies

Bring the mandarin juice with agar‑agar to the boil and cook for 1 minute.

Pour into a suitable container and leave to set.

Cut into cubes.

Almond ice cream

Toast the flaked almonds in the oven at 160°C for 8 minutes until brown.

Heat the Cream with the sugar and milk.

Pour onto the egg yolks whilst stirring.

Cook this mixture to 80°C in a thermo‑blender or saucepan.

Grind the almonds with the salt and the mixture finely in the blender.

Strain the mixture and leave to cool.

Churn the ice cream in an ice cream machine or Pacojet.

Assembly

Place the amaretti biscuits in a bowl and sprinkle with espresso, amaretto and a few drops of PX reduction.

Add the crispy pearls, segmented mandarin pieces and cubes of mandarin gel.

Place a quenelle of almond ice cream on top.

Finishing touch

Finish the dish à la minute with the warm foam and cocoa powder.
