Ingredients

For 10 servings

Wild garlic velouté

200 g onion, finely chopped

150 g white celery, finely chopped

200 g leek, finely chopped

50 ml Debic Roast & Fry

600 ml Debic Culinaire Original

100 g fresh wild garlic

50 g spinach

1 l chicken stock

salt and pepper

Garnish

20 white asparagus spears

30 morels

50 ml Debic Roast & Fry

salt and pepper

salad pea shoots

wild garlic oil

Preparation

Wild garlic velouté

Finely chop the onion, celery and leek.

Sweat gently in the Roast & Fry without colouring.

Add the chicken stock and simmer gently for 10 minutes.

Add the Culinaire Original and bring back to the boil.

Cook the wild garlic and spinach briefly in the warm stock.

Blend to a smooth, bright green velouté.

Season with salt and pepper.

Keep warm or cool quickly and reheat for plating.

Foam the velouté briefly with a stick blender just before serving.

Garnish

Peel the white asparagus and cut into pieces of approximately 6 cm.

Cook until tender in salted water, refresh in iced water, and pat dry.

Clean the morels carefully and sauté briefly in the Roast & Fry.

Season with salt and pepper.

Assembly

Place 2-3 pieces of white asparagus in the centre of the plate.

Arrange the morels playfully between the asparagus.

Serve the velouté alongside.

Finishing touch

Finish with a few drops of wild garlic oil if desired.

Decorate the salad with pea shoots.
