Ingredients

For 50 servings

Turmeric-citrus gel

350 ml water 

1 fresh turmeric root, peeled 

30 g sugar 

50 ml lemon juice 

4.5 g agar-agar

Garnish

yellow flower petals

Preparation

Shells

Fry the puri at 180°C until crisp and hollow. Store in an airtight container to maintain crispness.

Mascarpone

Whip the Tiramisù until fluffy and transfer to a piping bag.

Turmeric-citrus gel

Heat the water with the turmeric root and infuse for 30 minutes. 

Add the sugar and blend everything finely in a blender.

Strain through a fine sieve and add the lemon juice and agar-agar.

Cook for 1 minute and let cool in the refrigerator.

Then blend into a smooth gel and transfer to a piping bag.

Assembly

Make a small hole in each puri shell. Using both piping bags, fill each puri with Tiramisù and turmeric-citrus gel.

Finishing touch

Finish with a small dot of gel on top and garnish with yellow flower petals. 

Serve immediately to preserve the contrast between the crisp shell and creamy filling.
